A traditional peasant dish from the Val d'Aosta, made fashionable in 1961 in Harry's Bar in Venice. It consists of thinly sliced raw fillet of beef served with a cream sauce. The name is also applied to a similar dish with the meat marinated in olive oil and lemon juice.
