Grinding whole Spices

Spices may be ground by hand in a mortar or small bowl. Coffee grinders or spice mills save time, but they must be reserved for this purpose. For large quantities, a blender or food processor may be used. To coarsely grind or crack spices, seal them in a tough paper envelope and crush with a heavy saucepan.
