Making Compound Butters

Compound butters make delicious toppings for hot savory or sweet foods, and may also be melted to make a basting liquid or a last-minute enrichment for soups and sauces.
  1. Cream the butter and mix with the flavoring (here chopped parsley and lemon juice).

  2. Roll the butter in plastic wrap. Chill until firm then slice or use the soft butter to top hot food.
