  • About
Lamb’s heart serves one person, pig’s or veal heart two people, and beef heart four.
  1. With a sharp knife, trim the fat surrounding the heart and wash the meat thoroughly.

  2. Cut out the arteries and fibrous tissue. Heart may be left whole or sliced to cook.
