Game animals that resemble deer—Arctic reindeer, caribou, and the American elk or wapiti—are treated in the same way as venison in the kitchen. European elk is closest to North American moose, which is the largest deer in the world, and chamois still inhabits a few European mountains. Antelope, particularly gazelle, makes good eating. Buffalo (European bison) is protected from hunters, though it is now farmed and sold as steaks. The meat resembles gamey beef, as does the American crossbreed, beefalo, available only in the United States. Water buffalo, valued as a work animal, is eaten in Asia. Similar to beef, but less tender, it can be cooked in the same way. Bear meat has a musky taste and needs lengthy marinating. In Russia, however, bear paw is considered a delicacy. The meat of the huge North American big-horn sheep and the smaller European moufflon are akin to mutton.
