Cutting ASPIC into Decorative Shapes

Aspic decorations such as wolves’ teeth or crescents are cut from chilled aspic to adorn the border of cold platters.
Turn a thick layer of chilled aspic on to a damp sheet of wax paper. With a large knife cut the aspic into 3/8 in/1 cm slices, then cut out shapes with an aspic cutter, cookie cutter or small knife. Shown above are crescents and daisies (top), and wolves’ teeth (bottom).
