Using a Mandoline

The mandoline (see Cooking Equipment) has an adjustable blade for shredding or slicing wafer-thin rounds of vegetables, and is useful for obtaining different shapes of potato.

  1. For even slices, work the vegetable up and down across the blade, adjusting the blade to obtain thick or thin slices.

  2. For a lattice, use the serrated blade, turning the vegetable with each cut.
