Chopping Mushrooms

Mushrooms vary in size, so in order to cook evenly they should be cut into equal pieces. For speed when chopping by hand, use the largest knife you are comfortable with. There are two methods of chopping mushrooms—by hand or food processor.
  1. When chopping by hand, hold the cap steady and cut the mushroom in slices.

  2. Pile the slices one on top of the other and cut them crosswise in rough sticks.

  3. Finally, chop the sticks. Holding the point of the knife down with the flat of your hand, bounce the blade up and down, working to and fro across the board.
