With modern technology it is now possible to cultivate several species of mushroom which used to be available only in the wild. No sooner does a wild variety become sought after—the oyster mushroom in the United States for example—than it seems some enterprising grower starts reproducing it commercially. Such mushrooms can be spotted by their clean appearance and relatively uniform size. Unfortunately, like so many farmed ingredients, they tend to be an emasculated version of the wild original, with a milder flavor and paler color.
