Cutting Pasta by Machine

Let the dough hang over the edge of the table or work surface to dry for 5-10 minutes before cutting. When it has a leathery look, it is ready to cut. The machine can be set for a variety of widths.
  1. Fit handle next to appropriate roller and run dough through.

  2. As the strips of dough emerge, catch them on your hand.
