Electric machines are invaluable for making cookies. Stiff doughs that require kneading do well in a food processor or mixer with a dough hook, while softer doughs can be beaten in a food processor or with an electric beater. However, do not overwork the dough as this will make the cookies tough. Chopped ingredients should be mixed in by hand to give a more even distribution in the dough.
