To make handling a cake easier, set it on a piece of cardboard before you start.
- With a serrated knife, trim the crusty edges from the cake. With scissors, trim the cardboard level with the edge of the cake.
- With the point of a knife make a small cut in the side of the cake. This makes sliced layers easy to line up when reassembling the cake.
- Cut the cake in horizontal layers, holding your hand firmly on top of the cake to guide the knife.
