Alternative method 2

Coarsely chop all but one-tenth of the chocolate then melt it in a water bath. Remove it and stir in the reserved chunk of chocolate. Continue stirring until the chocolate cools to the desired temperature. If part of the chunk remains unmelted, remove it.
