Ornamental sugars are used to decorate breads and cakes, and some are served to sweeten hot drinks, for example candy crystals—light brown, irregular crystals, often called coffee crystals. Colored or confetti sugar is white sugar that has been dyed with food coloring, and is popular as a dessert decoration. White or colored crystal sugar, also called coarse or pearl sugar, remains crunchy even after baking and is sprinkled on sweet bread and pastry doughs such as English Bath buns.
