Shaping Nougatine

Nougatine becomes brittle and unworkable when cold, so it must be worked quickly and kept warm. Work near the oven if possible and warm the work surface by placing a roasting pan of hot water on it. Make sure the surface is dry, then oil it; all utensils should be lightly oiled. Any nougatine scraps can be reused.
  1. With a metal spatula, keep folding and spreading the prepared nougatine. Repeat several times while it is still warm to keep it pliable and speed cooling.

  2. While still pliable, roll the nougatine out very thinly. (A metal rolling pin is best but a wooden one may be used.) If the nougatine becomes too brittle, warm it on a baking sheet in a low oven.

  3. With a heavy knife, cut the nougatine into strips and then into shapes. If you find that the nougatine is very difficult to cut, use a wooden rolling pin as a mallet to help force the knife through the nougatine.
