Chocolate Cigarettes

Chocolate cigarettes are favorite decorations on festive cakes and creamy mousses.
  1. Pour tempered or cooled, melted chocolate on to a cool marble slab or work surface. Spread the chocolate as smoothly as possible using a flexible metal spatula, in a layer 1/16 in/1.5 mm thick without leaving any holes. If the chocolate is too thick, it will not roll.

  2. When the chocolate is cooled to the point of setting, mark it in parallel lines the width of a metal pastry scraper. Hold the scraper at an angle of 45Β°, pressing the blade firmly against the marble. Push the scraper slowly away from you to roll the chocolate into a neat cylinder.
  3. Continue to make cigarettes. If the chocolate is too warm, it will stick to the scraper. If it is allowed to cool too much it will merely make shavings. It should be reheated in a water bath and the process repeated.
