Peeling Citrus Fruits

The zest and pith pull away easily from most citrus fruits, leaving segments covered in skin. However, when cutting segments or slicing for salads, zest, pith and skin should be cut away together.

For large citrus: with a serrated knife, cut a slice from top and bottom of the fruit through to the flesh. Cut away the zest, pith and skin, working from top to bottom, and following the curve of the fruit.

For smaller citrus: cut zest, pith and skin off in one piece, in a spiral as when peeling an apple.
