Grating Citrus Zest

The zest of citrus fruit, containing the aromatic oil, is often used with the juice, adding a mellow, perfumed flavor.

If using a flat grater: rub the surface of the fruit backwards and forwards on the fine grid 2-3 times to remove the zest without any of the bitter white pith.

If using a zester tool: scrape it against the surface of the fruit to remove the zest.

Note

Citrus oil can also be extracted by rubbing the fruit with sugar cubes to soak up the oil. (The sugar should then be crushed or dissolved to be used as a flavoring.)
