Chopping and Grinding Nuts

The consistency of nuts, whether chopped or ground to a powder, is important to the success of a recipe. Nuts are best chopped by hand so the finished texture can be controlled; it may be coarse or quite fine and will always be uneven. A food processor, coffee grinder or nut mill may also be used for chopping and grinding. It will give a more even consistency, but can very quickly overwork the nuts, forming a paste.

To chop by hand: using a large chopping knife or a curved mincing knife in a wooden bowl, chop about ½ cup/50 g nuts at a time until they are broken into pieces of desired size.
