Rolling pin

A long hardwood cylinder 2-3 in/5-7 cm in diameter, with or without handles. A heavy pin helps in rolling large quantities of dough, as does a pin which revolves on shafts (best of all with ball bearings) for even operation. A hollow glass rolling pin filled with ice or iced water is convenient for puff pastry except in hot conditions, when condensation is a problem.
