A conical nozzle that shapes whipped cream, choux pastry dough and icing, as it is forced through. Piping tubes of tinned steel or plastic come in a wide range of decorative shapes and sizes. For clean-cut patterns, the nozzle must be incisively sharp. A great variety of small tubes are used for cake decorations, particularly of royal icing. Some slot into metal piping guns, or they may simply be dropped into a paper piping cone or pastry bag.
