Standard vegetable mixture used in the beginning stages of stock making: 50 percent chopped onion, 25 percent chopped celery, and 25 percent chopped carrot. Can also refer to same as ingredient in stews or other dishes. As in: “You need more mirepoix in that stock” or “Cut me a nice mirepoix to garnish that stew!”
