Used to mean the filet of beef, trimmed of all fat and the “chain,” but now often refers to any fatless, boneless piece of tenderloin from any animal. One even sees “tournedos” of fish on menus, usually referring to a piece of fish cut into medallion shapes. Unless used in conjunction with “Rossini,” it’s often a license to steal, meaning a way to sell scraps or odd bits by giving them a fancy name.
