Cornstarch also called corn flour is a very fine white powder made from corn. It is used in recipes for its thickening power in gravies, sauces, custards and pie fillings. But it is often used in baking recipes in conjunction with flour to add structure and increase the tenderness in whatever you’re making. Cornstarch is also a key ingredient in cake flour, which is why so many bakers prefer it to all-purpose flour for yielding tender cakes.
