Removing the stone from an avocado
Using a sharp knife, slice the avocado in half lengthways through the skin and flesh, until you hit the stone, then cut all the way around the stone. Twist the two halves of the avocado in opposite directions to separate them.
Firmly whack the wide end of the blade of a heavy chef’s knife into the stone to embed it, then twist and lift the stone away. To get the stone off the knife, firmly knock the handle of the knife against the edge of the rubbish bin, with the stone over the bin so that it falls off into the rubbish. Scoop the avocado flesh from the skin with a large serving spoon.
