Prue’s Handy Hack: How to Prepare a Mango

Hold the mango upright on a cutting board, with the stem end facing up. Using a sharp knife, make a slice just to one side of the central stone so that you cut off one fleshy cheek, working your knife around the stone. Repeat this process on the other side of the mango, to create a second fleshy cheek. Now you have two options:
Removing mango skin with a glass and slicing the flesh
Hold one cheek with the skin side in the palm of your hand. Slide the rim of a sturdy glass between the skin and the flesh of the mango by applying firm downward pressure to work the skin off, leaving the flesh intact in the glass. Repeat for the other cheek.
