Basically, a crumble is a mixture of flour, sugar and butter, rubbed together to the texture of granola. I usually add a good handful of flaked almonds and sometimes spice the mixture with cinnamon and ginger.
I make a crumble in seconds, with equal quantities of the three ingredients, in a food processor. But you need to watch it and stop before it is too fine.
A good trick is to pre-bake the crumble-top mixture – spread it out on a baking tray and baking at 180°C/160°C fan/350°F/Gas 4 until it’s biscuit coloured. Then, you can spread it on the hot, cooked fruit just before serving. That way you get a crunchier top with less of a soggy underside.
