Bain Marie is a water bath used to gently heat ingredients. In this book it is used o to melt chocolate, by putting the chocolate in a heatproof bowl over a saucepan of simmering water. The base of the bowl must not come in contact with the water in order for the chocolate to melt without immediately setting again.
