We are particular about salt at Little Flower. Each salt, especially Maldon, pretzel, or Fleur de Sel de Guérande (gray sea salt from the Guérande region of Brittany), has a different structure, flavor, and purpose. Sea salt is called specified in the majority of these recipes, but kosher salt also works beautifully. We emphatically say no to Morton’s table salt, because it has a strong iodine flavor. Since table salt is more chemically processed, the small grain size results in a saltier flavor. We prefer Diamond Crystal kosher salt because it dissolves nicely. As for sea salt, look for a finer-grained one for general cooking purposes.
