I know that someone will tell me that courgettes (zucchini) are, in botanical terms, not a vegetable but a berry, but treated like vegetables and charred, braised or grated into little fritters, they are one of my absolute favourites – and versatile, too. Cucumbers (from the same family) are usually chopped into salads or pickled, but they can be a revelation when cooked. Other options abound, but notably asparagus, which is a treat and super quick to cook. Try it instead of toast soldiers with a soft-boiled egg.
