Usually anywhere between 4 to 8 chops joined in a row with the main, solid bone (chine bone) removed so you can easily cut the chops apart, some or most of the fat trimmed off. Look for those that have some fat remaining or the lamb may well dry out when cooking.

Where to buy I buy this from the butcher counter in my supermarket or pre-packed. You can buy New Zealand, vacuum-packed, trimmed racks from wholesalers.
