Look out for those that have a good single piece of meat and fine bone, rather than ones that have strips of meat following up the bone.

Where to buy Butchers or the pre-packed fresh meat section of the supermarket. I do not buy these frozen as they tend to be cut after freezing and are therefore rather strange shapes.
