Use double cream in all recipes unless otherwise stated. Keep longlife cream for emergencies, but only use in cooking, not for whipping, as the flavour is ‘custardy’. Only whipping and double cream can be whisked. Crème fraîche is excellent for sauces as it does not curdle when boiled.

How to store Store fresh in the fridge and use by the use-by date. Keep longlife cream in the cupboard. Fresh cream can be frozen, but it is only good for using in sauces.
