Puff, shortcrust, sweet shortcrust and filo, all available ready rolled and, apart from filo, unrolled. Buy all-butter puff pastry for a richer taste. Unrolled pastry is good value. Most ready made pastry is good quality although some budget brands have little flavour. Some bought pastries are good enough to pass off as homemade.
