Fresh pasta is wonderful, but dried pasta is fine for most recipes. Try specialist brands as the texture of some of these is superior to budget lines. Egg pasta has a slightly richer flavour. You can also buy wholewheat pasta, which needs longer cooking, and gluten-free pasta made from pulses for coeliacs.
