1. French for bean, descendant of the small ayacotl of Central America and Southern Mexico, not the fava bean, which was the type of bean known to the ancient and medieval worlds; 2. As in haricots verts, almost sweet green beans barely ¼ inch wide that are passing into the greengrocer vernacular as “verts.” They can be found at the same price as the large ones at the bottom of all supermarket bins, where they slip easily because of their small size.
