Sometimes a cook would like to prove to him- or herself that they can make a soufflé and feel the urge to experiment but are stopped by lack of an oven, which is not a rare occurrence in many a modern apartment. In this case, be smart, and preheat your electric frying pan to 325°F for savory soufflés or 400°F for dessert soufflés. Placing the dome lid on the pan transforms it into an oven. I used such a frying pan to prepare soufflés many times at the beginning of my career, when I was doing demonstrations to women’s groups in locales where no ovens were available. If you want the sides of the soufflé to remain soft, fill the pan with water and preheat to 325°F. If you prefer them to turn crispy, bake the soufflé in an empty pan that has been preheated to 425°F.
