There are two varieties. The more common, mung bean sprouts, are white and plump and have a decided crunch. The second, soy bean sprouts, are also white, but they are longer and have a yellow soy bean at the tip. Both types are sold fresh by weight in Chinese markets and are widely available. They are stored the same, too, in the refrigerator in plastic bags punched with holes. They will keep for no more than 2 days, after which they will begin to turn brown and to soften.
