This highly aromatic oil made from toasted sesame seeds has a defined nutlike fragrance. I use it to flavor sauces and marinades or as a dressing. It easily burns if used in direct cooking. Because it is a heavy oil, it should never be used in stir-fries, despite what you may have seen or read. Once opened, sesame oil will keep, tightly closed, at room temperature for up to 4 months.
