This unusual, deep green, zucchini-shaped gourd, which can range from 1 foot to 3 feet long, has pronounced ridges running along its length. Also known as Chinese okra or luffa squash, it is a sweet vegetable, pure white inside its green skin, soft, and excellent in soups. The squash will keep in a plastic bag in the refrigerator for up to 1 week.
