Regarded as a delicacy, the dried, olive-shaped seeds of the lotus pod are cooked and mashed and used as fillings in teahouse sweets. They are sold by weight in Chinese markets, and will keep for at least a month at room temperature in a tightly sealed jar. However, their flavor fades and their texture toughens as they age.
