Dumpling Wrappers

These pliable wrappers are similar to wonton wrappers except that they are round, usually 3¼ to 3½ inches in diameter, and labeled “dumpling wrappers” or “dumpling skins.” Like wonton wrappers, they come 60 to 80 per package; are made from wheat flour, water, and eggs; and are dusted with cornstarch. They are also made without eggs. Dumpling wrappers made with eggs are yellow, and those without are cream-colored and labeled “Shanghai.” Well wrapped, they will keep in the refrigerator for 3 to 4 days and in the freezer for up to 3 months. Thaw and allow to come to room temperature before using.
