Across Greek islands and throughout the Mediterranean, caper bushes grow wild, hanging majestically off rocky cliffs overlooking the sea, scoffing at the idea of being restricted to a garden. Though they have surged in popularity recently, capers have been a Mediterranean staple for centuries. There is a widespread belief that tiny capers are the best, but I disagree strongly. They are more widely available than their superior cousins, which perhaps explains their ubiquity in books and blogs, but small capers lack the flavor and aroma unique to the larger variety. Try them yourself and you will be hooked for life.
