Defined by the presence of sugars. Sugar was once a dominant component in cocktails, but as palates have changed and more people are thinking about health and well-being, the trend for very sweet drinks and using lots of sugar in cocktails has been declining. It doesn’t mean that sugar will disappear from drinks completely – sweet flavours are needed for balancing the five flavours – but there will be a greater reliance on healthier natural sugars, such as fruit.
