Almost as mystical as its fairytale namesake, the dryad’s saddle is common in the wild, but it has virtually no commercial availability. If you do happen to get your hands on it at a market, farmers’ market or deli, which will no doubt be the result of a forager’s random find whilst looking for something else with more demand, it’s fascinating to both cook and eat.
