Latin Name
Hydnum repandum

Season
August/September to February
Multiplying like wildfire in the right conditions and season, the pied de mouton is a commonly found stout, stumpy mushroom which has a meaty off-white or cream-coloured cap with brown highlights. The hefty cap protects its unusual tiny and delicate spines, which flake away from the mushroom at the lightest touch and spread the spores throughout the forest. Another lover of trees, pied de mouton or ‘hedgehog’ as it is known can be picked throughout Europe, the USA and Canada from early autumn right through to late winter, and is one of the last mushrooms of the season.
