Like natural spindly and bright micro-fibers, enoki grows in long, thin, off-white stems round 30cm/12in with pinhead-sized tiny caps. Enoki’s mushroom cap features are so small, that you have to look very closely to even realize it’s a fungus. Delicate in texture, with a squidgy bite, enoki has a sweet, almost sesame seed oil taste and makes for a great noodle or pasta alternative.
