Mushrooms are a product of their environment, not just in their growth or colour, but in the way they taste. Some mushrooms are nutty, others are fruity, and wild mushrooms have a taste of whatever forest they have hailed from. Certain mushrooms can taste like pine, and others have an oaty or cornmeal element to them. Apricots, chestnuts, walnuts and coconut are some of the flavours that have been attributed to various mushrooms, but as with most natural foods, the experience is wonderfully subjective and different people taste different things.
