Each of the mushroom profiles include step-by-step guides on how to clean that particular mushroom. In the past, cooks have tended to apply a one-rule-for-all policy when it comes to mushrooms, but this can mean that you spoil a dish by washing the super-absorbent cep or brushing mud-caked trompettes (a task with no end in sight, by the way). Some mushrooms need a gentle bath, some need delicately wiping with a wet cloth, and others just need a quick dust with a dry brush. As you get to use different mushrooms, it will become apparent how to tackle them, depending on how delicate they are, whether they are gilled, gill-less or pored, and how and where they grow โ€“ and of course how dirty they are.
