Each of the mushroom profiles include step-by-step guides on how to clean that particular mushroom. In the past, cooks have tended to apply a one-rule-for-all policy when it comes to mushrooms, but this can mean that you spoil a dish by washing the super-absorbent cep or brushing mud-caked trompettes (a task with no end in sight, by the way).
