Also known as bean curd silk strips, dried bean curd threads are widely used in vegetarian cuisine because of their high protein content. They should be reconstituted in stock or water before use. Bean curd threads are popularly eaten as a cold appetiser in Beijing during the summer, seasoned with a light vinegar or soy sauce dressing.
